Preparation:
This unusual vegetable treat can be eaten as a meal with salad, or cut into sections and served as a side dish.
Cut eggplants into half lengthwise. Prick flesh of eggplant surface with fork. Place eggplant halves on a piece of aluminum foil, skin side down, and spread black bean sauce on cut surface of eggplant. Wrap foil into a loose tent over eggplant and place in 350 degree oven for 45 to 50 minutes. Eggplant is done when soft and fork tender. |
