Preparation:
Cut potatoes in half lengthwise. Scoop out flesh, leaving 1/4" shells. In a
medium bowl, mash potato and milk with fork until smooth. Stir in
broccoli, ham, chives, pepper and 1/4 cup of cheese until well combined.
Fill each potato shell with mixutre, mounding slightly in center. Bake at
375° for 25-30 minutes or until well heated, sprinkling with remaining
cheese during last 5 minutes of baking. Can freeze unstuffed baked
potaotes minus the cheese on top, in Micro safe freezer bag. Sealed and
labled. To Thaw place in refrigerator overnight. or in uncovered Micro dish
for 5-7 minutes on Medium. To reheat: place in uncovered Micro. dish and
Microwave on High for 2-5 minutes until heated through, adding 1 T.
remaining cheese during last minute of heating. Can also bake in regular
oven for 25-30 minutes until heated, sprinkling cheese on top during last |
