Preparation:
These are tortilla turnovers, stuffed with a creamy, yet spicy filling of cheese and peppers, and fried until they're crisp on the outside and melting on the inside. Ole!
Soften the tortillas by heating briefly in a little olive oil in a pan. Remove and drain on paper towels. Mix the cheese, cream, peppers and Jalapenos together and add a little Chunky Salsa or Taco Sauce- not too much or the filling will be too sloppy. Divide the filling equally and spread over half of each Tortilla. Fold untopped half of each Tortilla over the filling and fasten with a toothpick. Lightly fry on both sides, being very careful when turning the Quesadillas over. Serve with Chunky Salsa, Taco Sauce or sour crea |
