Dena's Shrimp And Rice Casserole

Ingredients:

  1 1/2         pounds  uncooked shrimp -- peeled and deveined
  1              small  onion -- chopped
     1/4           cup  bell pepper -- chopped
  2        tablespoons  butter or margarine
                        salt and pepper -- to taste
  1                can  cream of mushroom soup
     1/4           cup  sherry
  2               cups  cooked rice
 

Preparation:

Saute onion, bell pepper and shrimp in 2 T butter just until onion and pepper is wilted and shrimp are beginning to turn pink. Add sherry. Combine with cream of mushroom soup and rice. Turn into greased casserole and bake at 350 degrees for 45 minutes or until heated through.
