Easy Chicken Noodle Casserole (Low Fat Style)

Ingredients:

   4                    chicken breasts -- or parts to 6
                        salt and pepper -- seasoning to taste
   1      package       noodles -- 16oz ( i use
                        -- yolkless)
   1      can           cream of chicken -- (low fat)
   1      can           cream of celery -- (low fat)
   1      can           chicken broth -- may be needed (no
                        -- fat)
                        celery flakes -- or seeds
 

Preparation:

1. Boil chicken with all the seasoning.. 2. While chicken is boiling; In large microwaveable, or oven proof dish, mix the two cans of soups, salt, pepper, and celery seed to taste. 3. When chicken is done, tear in bite size pieces and add to soup mixture and stir. 4. Boil noodles until soft in Chicken broth from chicken parts. When soft add noodles to soup mixture. 5. Measure three cups of broth into soup, spices, and noodle mixture (here you add the can of chicken broth if you don't have enough chicken broth) 6. Stir up good and either microwave on high in a regular microwave covered for 30 min./ or put in a 350 degree gas/electric oven covered for 40-45 min. This is a wonderful dish. It makes a lot.....Make sure your baking dish is big...If you microwave it, you can use a mixing bowl that is plastic and cover with saran wrap, not aluminum. The more it sits, the more flavorful it is. So if you have time to make ahead, do so. Things you can add to this dish to complement and is good. Baked apples....1. Take an apple. 2. Peel and Core it and Quarter it in a small cup.3. Add one lump of margarine or butter 4. Add sugar and cinnamon like you do for cinnamon toast...5. Cover tight with saran wrap. 6. Microwave for about 5 min. Makes great baked individual apples. Add vegetables
