Green Rice Casserole

Ingredients:

  1                cup  uncooked rice
  1                cup  chopped fresh parsley
  1                     onion -- finely chopped
  1                     green bell pepper -- cut in thin strips
  2                     eggs -- separated
  1                cup  grated parmesan cheese
  1                cup  milk
     1/4           cup  butter -- melted
                        salt and pepper
 

Preparation:

1. Cook rice.

2. Mix all ingredients except egg whites. Beat whites stiffly and fold into rice mixture. Spread in greased baking dish.

3. Bake at 350 degrees for 45 minutes or until heated through.
