Ingredients:

     1/4  cup           olive oil
     1/2  cup           butter
   1                    onion -- chopped
   2      pounds        ground beef -- browned and drained
   1      can           whole tomatoes
     1/2  cup           tomato puree
   2      tablespoons   tomatoe paste
   4      cloves        garlic
   3      tablespoons   fresh chopped parsley
   2      tablespoons   good red wine
   2      stalks        celery
   1                    carrot -- chopped fine
                        salt and pepper to taste
                        lasagna
   1      tablespoon    olive oil
   1      pound         ricotta cheese
   3      quarts        boiling water
   8      ounces        dry lasagna noodles
   1      pound         mozzarella cheese
   1      pound         mild chedder cheese
 

Preparation:

Cook all sauce ingredients over medium heat for 30 minutes, then simmer. Boil noodles in water and 1 tablespoon olive oil until tender. Drain. Layer bottom of pyrex baking dish (large) with a few noodles. Place 1/3 of meat sauce mixture over noodles. Layer with 1/3 mozzarella and cheddar cheese. Top with 1/3 of ricotta cheese. Place another layer of noddles on top of ricotta cheese. Top with meat sauce, cheese, and ricotta. Add another layer of noodles, and top with remaining meat sauce, and cheese. Bake for 30 minutes at 375 degrees.
