Mexican Vegetarian Casserole

Ingredients:

  1                can  (15 1/4-oz) whole kernel corn -- drained
  1                can  (15-oz) black beans -- rinsed & drained
  1                can  (10-oz) whole tomatoes and green chiles
  1             carton  (8-oz) sour cream
  1                jar  (8-oz) picante sauce
  2               cups  shredded Cheddar cheese
  2               cups  cooked rice
     1/4      teaspoon  pepper
  1              bunch  green onions -- chopped
  1                can  (2 1/4-oz) sliced ripe olives
  1            package  (8-oz) Monterey Jack cheese -- shredded
 

Preparation:

Combine first 8 ingredients; spoon into a lightly greased 13x9x2-inch baking dish. Sprinkle with green onions, olives, and Monterey Jack cheese. Bake at 350 degrees for 50 minutes.
