Mom-Mom's Sonia's Chicken

Ingredients:

  1                     chicken -- cut into 8ths
  4        centiliters  garlic -- peeled and sliced
  2        tablespoons  olive oil
     1/2           cup  dry red wine
     1/2      teaspoon  dry basil
     1/2      teaspoon  oregano
     1/2      teaspoon  pepper -- or red pepper
                        -- flakes if you like
                        -- hot
                        fresh parsley -- for garnish
 

Preparation:

1. Place chicken in a shallow baking pan. Sprinkle with garlic slices all around (under as well) the chicken pieces. 2. Pour the oil and wine over the chicken; then sprinkle the basil, oregano and pepper. Cover the pan tightly with foil. 3. Bake for 45 minutes in a preheated 350 degree oven. Remove the foil and bake uncovered for an additional 15 minutes. 4. Garnish with parsley when you are ready to serve. Good with noodles or rice.
