Sausage Potato Casserole

Ingredients:

   1      can           mushroom soup
     1/2  cup           milk
     1/2  cup           chopped onion
   1      tablespoon    pimento
     1/2  teaspoon      salt
     1/4  teaspoon      pepper
   4      cups          thinly sliced potatoes
   1      package       precooked sausage -- (small
                        smoked) cut in small pieces
   1      tablespoon    butter
     1/2  cup           shredded cheese -- cheddar
 

Preparation:

Combine soup, milk, onion, pimento, salt and pepper. Blend well. Place 1/2 of the potatoes in a greased 2 quart casserole. Add 1/2 of the sausages, cover with 1/2 of the soup mixture. Repeat layers. Dot with butter, cover and bake at 350 degrees for 1 hour and 15 minutes. Remove cover, sprinkle with cheese, bake uncovered for 15 minutes more, or until potatoes are tender. Randy Rigg
