Ingredients:

   1      pound         yellow squash -- sliced
   1      medium        onion -- chopped
   2                    carrots -- coarsely grated
   1      stick         unsalted butter -- (1/2 c.)
   1      cup           sour cream
   1      can           condensed cream of chicken soup -- (10 3/4 oz.)
   2      cups          pkg. cornbread stuffing mix
                        pimientos- -- (1 small can)
 

Preparation:

Preheat oven to 375 degrees. In large skillet w/ oil, saute onions, carrots, squash and butter till tender. Stir in sour cream and soup. In 2 qt. Baking dish, spread stuffing mix on bottom. Spread squash mixture over stuffing. Cover and bake till heated throughout. Remove from heat. Sprinkle pimentos on top. Cover and let stand till ready to serve. Approximately 20 minutes.
