Preparation:
6 large baked yams or sweet potatoes, cooked and cooled 1/2 cup of brown sugar 1/2 cup butter 1/8 teaspoon grated nutmeg 1/8 teaspoon cinnamon 1/8 teaspoon allspice 1/2 cup cream 1 well beaten egg *** PRALINE TOPPING *** 1/2 cup of butter 3/4 cup brown sugar 1 tablespoon flour 1 cup chopped pecans 1/2 cup brandy
Peel the potatoes and cut into 1 1/2 inch pieces. Spread them out in a shallow baking dish, about a 9x14 size pan works well.
Melt the butter and add in the nutmeg, cinnamon, allspice, and cream. Remove from heat and add in the beaten egg.
Pour the mixture over the potatoes and mix well, mashing some of the potatoes up and mixing a little more. Spread the mixture out evenly in the pan. Spoon topping over the potato mixture.
Bake in a 350^ oven for 30 minutes.
PRALINE TOPPING: Melt butter over low heat. Whisk in brown sugar, flour, pecans, and brandy. Mix until smooth over low heat. |
