Sweet Potatoes and Nut Casserole with Topping

Ingredients:

                        sweet potato mixture
  5              large  sweet potatoes -- cooked
  2               cups  flour -- self-rising, sifted
                        -- twice
  2               cups  sugar
     1/2           cup  walnuts -- finely chopped
  1              stick  butter
  1           teaspoon  vanilla
                        topping
  1                cup  brown sugar
  1              stick  butter
  1           teaspoon  vanilla
     1/2           cup  pecans
 

Preparation:

Cook potatoes in pot until tender. Cool. Peel and mash them up in a large bowl. Add the flour, sugar, butter, vanilla, eggs, and walnuts. Mix with electric mixer on low speed; all the strings should be removed. Set aside. In a small bowl, mix brown sugar, butter, vanilla, and pecans. Mix well. Put sweet potato mix in a 3" deep pan. Spread brown sugar mix on top. Cook at 350 for 25 minutes, then brown on top for 5 minutes. Let cool until ready to serve.
