Ingredients:

1 pound ground beef
1 cup chopped onion
1 cup chopped green bell pepper
2 cans tomato sauce -- 8-oz each
1 can whole kernel corn, drained -- 12-oz, or 1 1/2 cups
1/2 cup pitted black olives -- chopped
1 clove garlic -- minced
1 tablespoon sugar
1 teaspoon salt
2 teaspoons chili powder -- (2-3 tsp.)

Cornmeal Topper:
6 ounces sharp process American cheese -- shredded, 1 1/2 cups
3/4 cup yellow cornmeal
1/2 teaspoon salt
2 cups cold water
1 tablespoon butter or margarine |
Preparation:
1. Cook meat, onion, and green pepper in a large skillet till meat is lightly browned and vegetables are tender. Stir in tomato sauce, corn, olives, garlic, sugar, the 1 teaspoon salt, chili powder, and pepper. Simmer 20 to 25 minutes, or until thick. Add cheese; stir until melted. Turn into greased 9x9x2-inch baking dish.
2. Make Cornmeal Topper: Stir cornmeal and 1/2 teaspoon salt into cold water. Cook and stir till thick. Add butter; mix well. Spoon over hot meat mixture.
3. Bake casserole in moderate oven (375F) about 40 minutes. Makes 6 servings. |
