Wild Rice And Cheese Casserole

Ingredients:

  7               cups  prepared wild rice **
     1/2         pound  mushrooms -- (about 3 cups),
                        -- sliced
     1/2           cup  chopped onion
     1/2           cup  butter
  1                cup  grated cheddar cheese
  1                can  -- (19 oz.) tomatoes
  1           teaspoon  salt
  1                cup  hot water
 

Preparation:

** I cook the wild rice in chicken broth....it seems to taste better than if you use water. Saut‚ mushrooms and onions in butter for about 5 minutes. Toss rice with all ingredients. Place in buttered 2-quart casserole; cover and bake 1 hour at 350ºF.
