Preparation:
Combine 2 cups water and bouillon granules in a medium saucepan; bring to a
boil. Stir in rice. Cover, reduce heat, and simmer 25 minutes or until rice
is
tender and liquid is absorbed.
Stir in yogurt, dressing, parsley and jalapeno peper. Spoon mixture into a
1-quart baking dish coated with cooking spray.
Bake at 350 degrees for 20 minutes. Top with cheese; bake an additional 5
minutes or until cheese melts. |
