Ingredients:

   1      cup           uncooked regular rice
   1      medium        onion -- chopped
   1                    medium-size green pepper -- chopped
     1/4  cup           plus 2 tbls. butter -- melted
   1      can           chicken broth -- diluted (10 3/4
                        -- oz.)
   1      can           mushroom stems and pieces -- undrained (4 oz.)
   1      jar           diced pimiento -- undrained (4 oz.)
     1/4  teaspoon      powdered saffron -- (optional)
   2      tablespoons   grated Parmesan cheese -- (optional)
 

Preparation:

Saute rice, onion, and green pepper in butter in a 2-quart casserole until rice is golden brown. Remove from heat; stir in next 3 ingredients. Add saffron, if desired. Cover and bake at 350 F for 55 minutes or until liquid is absorbed. Sprinkle cheese over top, if desired; bake 5 additional minutes.
