Preparation:
Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp.
Combine shrimp, macaroni, peas, eggs, green pepper, olives, pimiento, and onion; toss well. Combine mayonnaise, salt, and pepper; pour over shrimp mixture, tossing gently. Chill. Serve salad on lettuce leaves; garnish with tomato wedges, if desired. |
