Raisin Cabbage Salad

Ingredients:

   4      cups          cabbage -- shredded
   2      cups          zucchini -- shredded
   1      cup           scallions -- chopped
     1/2  cup           raisins
   4      cloves        garlic -- minced
     1/4  teaspoon      salt
     1/8  teaspoon      black pepper -- freshly ground
   2      tablespoons   cider vinegar
   1      tablespoon    olive oil
   1      teaspoon      olive oil
   1      teaspoon      Dijon mustard
     1/2  teaspoon      mustard seeds
     1/2  teaspoon      celery seeds
     1/2  teaspoon      sugar -- substitute = to 1/2
     1/8  teaspoon      red pepper flakes -- dried
 

Preparation:

1. In large serving bowl, combine cabbage, zucchini, scallions, raisins, garlic, salt and black pepper. 2. In small bowl, whisk together vinegar, oil, mustard, mustard seeds, celery seeds, sugar and pepper flakes. Add to cabbage mixture; toss to mix well. Refrigerate several hours before serving.
