Ingredients:

1 tablespoon fresh lemon juice

1/2 teaspoon ground cumin
1 tablespoon garlic -- finely minced
2 tablespoons fresh italian parsley -- coarsely chopped
2 tablespoons fresh cilantro -- coarsely chopped
salt -- to taste
pepper -- to taste |
Preparation:
1. In a large bowl, combine the tomato, pepper, cucumber and chili pepper.
2. In a small bowl, whisk the lemon juice, oil, ground cumin, and garlic. Pour the dressing over the vegetables and toss gently.
3. Fold in the parsley, cliantro, and salt and pepper to taste. Chill until ready to serve. |
