Preparation:
Place the cherries in a bowl and cover with wine. Allow to soak at least 30 minutes. Wash, core, and chop apples; do not remove the peel. Combine the apples and celery in large bowl. Drain cherries and add to apple mixture. Add the walnuts. in a separate bowl, using a hand mixer, beat the cheese until softened. Add half and half a little at a time until mixture is smooth and of a pouring consistency. Blend in sugar, lemon juice, and nutmeg.
Pour the dressing over the salad and toss to mix. Refrigerate until it is served. |
