BROWN RICE SALAD

Ingredients:

     1/2  cup           Uncooked brown rice
   3      tablespoons   Olive or vegetable oil
   2      tablespoons   Lemon juice
     1/8  teaspoon      Crushed red pepper
   1      Clove         Garlic -- crushed
   1      small         Cucumber -- chopped
   1                    Green onion (with top) -- thin
     1/2  cup           Cashew pieces
 

Preparation:

Cook rice as directed on package. Mix oil, lemon juice, red pepper and garlic. Stir cucumber, onion and oil mixture into rice. Cover and refrigerate about 3 hours or until chilled. Stir in cashews.
