Ingredients:

  14            Ounces  Pasta -- cooked al denté
  1                Cup  Sweet onion -- chopped
     1/2           Cup  Red sweet peppers -- chopped
  2             Cloves  Fresh garlic -- coarsely chopped
  1                Cup  Mushrooms -- sliced
     1/4           Cup  Fresh cilantro -- coarsely chopped
  2                     Roma tomatoes -- chopped (2 to 3)
  3        Tablespoons  Olive oil (or Garlic flavored oil)
  12                    Calamata olives -- halved (optional)
  2        Tablespoons  Pine nuts -- toasted
  1              Ounce  Parmesan cheese -- finely grated
  1              Ounce  Pecorino cheese -- finely grated
                        Salt (optional) and fresh ground pepper
                        to taste
 

Preparation:

Cook pasta acording to package directions. Place 2 tablespoons olive oil in large skillet. Over medium-low heat, sauté onions, peppers and garlic 10 minutes or until onions turn translucent. Add cilantro and mushrooms; cook until mushrooms are soft (about 3 minutes). Add tomatoes, salt and pepper and 1 tablespoon olive oil; cook 2 more minutes. Add olives and pasta; gently mix until warm. Place in large pasta bowl, top with cheeses and pine nuts.
