Chicken Cacciatore with Artichokes and Pasta

Ingredients:

   1      Jar           marinated artichoke hearts -- (16oz)
   2      Tbs.          oil
   1                    fryer (cut up) 21/2 to 3 lbs (or pieces
                        your choice)
                        flour
   1      Lb            can tomatoes (cut up)
   2      Cloves        garlic -- minced
   1 1/4  Tsp           salt
     1/2  Tsp           oregano
     1/2  Tsp           pepper
     1/2  Tsp           basil
     1/2  Lb            freshly sliced mushrooms
     1/2  Cup           red wine
 

Preparation:

drain the hearts and combine the liquid with the oil in a skillet. Heat till almost sizzling. Coat chicken pieces in flour and add to hot oil and brown on all sides. Place chicken pieces in a large casserole. Mix together the tomatoes all the spices and mushrooms then pour sauce over chicken and bake 350° for about 1 hour. Add the wine and hearts and bake 10 more minutes while you boil a 8oz package of pasta in water. drain pasta, place in serving bowl and pour the cacciatore` over the pasta. serve with hot crusty french bread and expect raves makes 4 servings
