Broiled Dijon Pork Chops

Ingredients:

  4                     pork center loin chops -- cut 1to 1 1/4"
                        -- thick
                        -- about 2 pounds
  2        tablespoons  red wine vinegar
  2        tablespoons  oil
  1         tablespoon  dijon mustard
  1           teaspoon  snipped parsley
     1/4      teaspoon  chopped chives
     1/8      teaspoon  tarragon leaves
 

Preparation:

Place pork chops on rack in broiler pan (or on grill over ash covered coals) so surface of meat is 4 to 5 inches from heat. Broil at moderate temperature 10 minutes, turn and continue broiling 10 minutes. Combine vinegar, oil, mustard, parsley, chives and tarragon. Brush with mustard mixture and broil 5 minutes. Turn, brush second side with mustard mixture and continue broiling 5 to 10 minutes or until done. 4 servings.
