1 pound pork tenderloin -- cut into 1/8" strips
trim all visable fat
1 cup sliced green, red, and yellow bell peppers
1/2 medium onion -- sliced
1 teaspoon crushed red pepper
4 flour tortillas -- warmed |
Preparation:
Spray a large nonstick skillet with vegetable spray. Heat skillet over medium high heat until hot. Add pork strips, bell peppers, onion and crushed red pepper to skillet; stir fry 5 minutes. Roll up 1/4 of the meat mixture in each tortilla. Servings: 4
