  3             pounds  boneless lean pork
  1              pound  boneless beef chuck
     1/2         pound  veal
     1/2         pound  pork fat
  2          teaspoons  kosher salt
  1           teaspoon  black pepper
  2          teaspoons  ground marjoram
     1/2      teaspoon  ground allspice
  2          teaspoons  garlic
  2          teaspoons  spanish paprika
 

Preparation:

prepare the casings for stuffing chill all ingredients and equipment well combine the pork, beef, veal, and pork fat grind together through an extra-coarse plate add the remaining ingredients-mix well loosely stuff into the prepared casings twist or tie off into 18-inch links hang in the refrigerator for 24 hours roast or grill as desired
