Ingredients:

  1              pound  pork brains
  1         tablespoon  salt
                        water to cover
  1                     egg -- beaten
                        cracker crumbs
                        butter or margarine
 

Preparation:

Soak brains in salt for 1 hour; drain. Dip brians in egg; roll in cracker crumbs. Fry in butter to brown over medium heat.
