Preparation:
With a paring knife pierce pork all over; insert garlic slices into the gashes, then rub the lime juice into pork. Combine orange juice, maple syrup and cayenne pepper in a medium size bowl. Add pork, turning to coat well. Cover and refrigerate at least 8 hours. Turn pork occasionally in marinade. Heat oven to 425 degrees. Lift the pork from marinade and place on a rack in a shallow roasting pan. Roast, uncovered, brushing often with the marinade, for 30 minutes; lower the heat to 350 degrees and roast another 40 minutes, brushing often with remaining marinade. Let the roast stand for 10 minutes at room temperature before slicing. |
