6 pigs knuckles
salt to taste
1 bay leaf
1 16 oz can sauerkraut -- drained
caraway seed
2 tablespoons bacon fat
1 small onion -- grated
1 small potato -- grated |

Preparation:
Cover pig knuckles with boiling water; add 1 tablespoon salt and bay leaf. Simmer for 1 hour and 30 minutes to 2 hours. Drain. Cover sauerkraut with boiling water; boil for about 30 minutes with caraway seed, salt and bacon fat. Add onion and potato; simmer for 15-20 minutes longer. Place sauerkraut on heated platter; top with pig knuckles. |
