Pork Tenderloin With Burbon And Molasses

Ingredients:

     1/4  cup           bourbon
   2      tablespoons   molasses
   2      teaspoons     whole grain mustard
   4                    garlic cloves -- minced
   2      tablespoons   shallots -- finely chopped
   2      tablespoons   vegetable oil
   1      teaspoon      salt
   2      teaspoons     coarsely crushed black pepper
   2                    trimmed pork tenderloins -- about 3 lbs., up to
                        -- 4
 

Preparation:

Combine all ingredients except the meat in a dish big enough to hold the pork tenderloins. Roll the tenderloins in the marinade, making sure to coat them completely. Cover and refrigerate overnight. Preheat the barbecue or broiler to high. Grill or broil the meat 4-5 minutes on each side for medium. Remove the tenderloins and let sit for a few minutes before slicing. Serve with Lemon Roasted Sweet potatoes.
