Roast Pork Shoulder With Pear Stuffing

Ingredients:

   1                    onion -- minced
     1/4  cup           butter or margarine
                        salt and pepper
     1/8  teaspoon      thyme
   2 1/2  cups          soft bread crumbs
   1 3/4  cups          chopped firm pears
     1/2  cup           boiling water
   1      5 pound       boned shoulder pork with pocket
 

Preparation:

Cook onion in the butter 2 to 3 minutes. Add 1 teaspoon salt, dash of pepper and remaining ingredients, except meat. Fill pocket of pork with stuffing fasten edges with skewers or roll up and tie with string. Rub outside of meat with salt and pepper. Put on rack in roasting pan and roast in moderate oven (350F) 3 hours, or until meat thermometer registers 185F (insert thermometer in thickest part of meat without touching stuffing)
