Preparation:
Lightly sprinkle pork chops with salt and pepper. Heat oil in a skillet over medium high heat; brown pork chops on both sides. Reduce heat. Drain tomatoes, and add liquid to pork chops. Coarsely chop tomatoes, and add to pork chops; stir in rice. Place a green pepper ring on each chop. Cover and simmer 40 to 45 minutes or until chops are tender. |
