Preparation:
Preheat oven to 450 degrees. Chop all vegetables very fine, then combine all ingredients in large bowl and let stand 15 minutes. In a large skillet heat 3 TBl. olive oil, add the mixture, flatten with spatula and cook for 8 minutes. Slide out and invert onto a plate, then put it back into skillet and cook in oven for 10 more minutes. Cut into wedges and serve hot. |
