Ingredients:

     3/4  pound         fresh spinach
   1      bunch         watercress
   4      whole         green onions -- with tops
     1/2  head          lettuce
   1      cup           mushrooms -- diced
   1      cup           asparagus
     3/4  cup           parsley
   1      cup           parmesan cheese
     1/2  teaspoon      curry powder -- 8 oz.
                        eggs beaten
 

Preparation:

Preheat oven to 450 degrees. Chop all vegetables very fine, then combine all ingredients in large bowl and let stand 15 minutes. In a large skillet heat 3 TBl. olive oil, add the mixture, flatten with spatula and cook for 8 minutes. Slide out and invert onto a plate, then put it back into skillet and cook in oven for 10 more minutes. Cut into wedges and serve hot.
