Preparation:
Prepare rice mix according to package directions. While rice is cooking, saute onion, red and green bell peppers in oil, then set aside.
Lay tortillas on flat surface and line with spinach leaves. Divide rice into six portions and spread on spinach leaves. Add equal amounts of vegetables to each. Top with tomato, cilantro and cheese. Wrap up each tortilla. Salsa can be added to taste. |
