Ingredients:

     1/2  pound         shrimp -- shelled
   1      whole         bean curd cake
   1      tablespoon    sake -- or dried white wine
   1      teaspoon      cornstarch
     1/4  teaspoon      salt
 

Preparation:

Preheat deep fryer to 375 degrees. Put ingredients into food processor, using metal blade and mix about 15 seconds (if you mince shrimp by hand, a regular mixer will do as well as a food processor). Shape into 3/4" balls. Fry in heated deep fat until brown, drain on paper towels. Serv with hot mustard and soy sauce.
