Spinach-Stuffed Appetizer Shells

Ingredients:

  18             jumbo  pasta shells
  1          10-oz pkg  frozen chopped spinach -- thawed, well drained
  1           8-oz can  water chestnuts -- drained and chopped
     3/4           cup  nonfat ricotta cheese
     1/2           cup  reduced calorie mayonnaise
     1/4           cup  finely chopped carrot
  3        tablespoons  finely chopped onion
     3/4      teaspoon  garlic powder
     3/4      teaspoon  hot pepper sauce
 

Preparation:

1. Cook shells according to package directions, omitting salt. Rinse under cold water until shells are cool; drain well. 2. Combine remaining ingredients in medium bowl; mix well. 3. Fill each shell with approximately 3 tablespoons spinach mixture; cover. Refrigerate up to 12 hours before serving.
