Ingredients:

   2      tablespoons   olive oil -- plus 2 teaspoons
   1      tablespoon    white wine -- plus 1 teaspoon
   7                    garlic cloves -- minced
     2/3  cup           fresh spinach leaves -- stems removed, torn
                        -- into small pieces
  11      ounces        cooked shell pasta
 

Preparation:

In a heavy skillet, heat the oil and wine. Add the garlic and saut‚ for 5 minutes. Add the spinach and saut‚ just until it wilts. Toss the garlic spinach sauce with the hot shells and serve. The recommended wines are: Fum‚ Blanc, Beaujolais, or Chenin Blanc. NOTES : Prep: 10 min, Cook: 5 min.
