Preparation:
Combine corn meal and salt with enough water to make a stiff mixture. Add
molasses and baking drippings in a heavy skillet. Cook on one side until
brown. Add more butter; brown on the other side.
According to hardy legend, the "Hoe Cakes" originated when slaves cooked
their corn meal on a hoe during a 15 minute break period in the open field
over an open fire. Of course, Hoe Cakes are much improved today. They smell
and look very tempting. |
