Ingredients:

  5               cups  tomato concasse
  1                cup  onion
     1/2           cup  white vinegar
  1           teaspoon  honey
  1           teaspoon  kosher salt
  1           teaspoon  mustard seed
  1           teaspoon  crushed red chiles
     1/2      teaspoon  garlic
     1/2      teaspoon  ginger
     1/4      teaspoon  ground coriander
     1/4      teaspoon  freshly ground nutmeg
  2                     clove
 

Preparation:

combine ingredients in a saucepan, over a moderate flame heat to a boil, reduce heat, and simmer for 2 hours, until thickened, stirring often pour into a sterile jar process for 10 minutes store in a cool, dark place
