Preparation:
Trim fat from steak. Heat oil in a skillet and brown the steak over high heat 3 minutes on each side. Remove from pan and keep hot. Add garlic, butter, tomatoes and oregano to the skillet. Cook over medium heat, 10 minutes.
Return the steak and cook over low heat for 5 minutes or desired degree of rareness. Sprinkle with parsley, salt and pepper. For an added treat, add some black pitted olives just before removing from heat. |
