Fluffy Sabayon Sauce

Ingredients:

   2      tablespoons   sugar
   1      tablespoon    cornstarch
     1/4  teaspoon      salt
   1                    egg yolk -- lightly beaten
     1/2  cup           milk
     1/2  cup           light cream
   2      tablespoons   sherry or brandy
   1                    egg white -- stiffly beaten
 

Preparation:

Makes about 1 2/3 cups 1. Mix sugar, cornstarch and salt in top of double boiler; add egg yolk and mix well. 2. Gradually add milk and cream. 3. Place over boiling water and cook, stirring constantly, until mixture thickens, about 5 minutes. 4. Remove from heat; cool. 5. Stir in sherry; fold in beaten egg white. Chill.
