Preparation:
combine chicken and beef broth or stocks in a saucepan, over a moderate flame bring to a boil and simmer for 25-30 minutes, until reduced by three-fourths combine grapefruit, orange, and lime juices and zests with water and sugar in a small saucepan, over a low flame bring to a boil and simmer for 20 minutes add to the stock reduction return to a boil and simmer until reduced to by half remove breasts from hens remove and reserve wing tips and remaining parts of hen for another use season breast portions with salt and pepper heat butter in a saute pan, over a medium flame add breast portions and brown for 3-5 minutes per side, until golden remove to serving plates pour reduced sauce into browning skillet and stir briefly to deglaze pan and reheat pour sauce over breast portions serve hot |
