Preparation:
Put the onion in a wide heavy pan, add the olive oil, and fry it over medium heat until it is transparent. Add the garlic, and fry the mixture for about 3 minutes more. Add the rest of the ingredients and cook the sauce over a brisk flame for about 15 minutes, stirring occasionally. Add the optional red pepper now if you are going to use it. The fast cooking will help reduce the sauce and make it thick, but be careful not to burn it. |
