Amount Measure Ingredient -- Preparation Method

3 tablespoons butter or margarine
3 tablespoons flour
1 cup milk
2 egg yolks -- slightly beaten
2 tablespoons lemon juice
salt and pepper
Preparation:
Heat butter. Stir in flour. Cook for 1 minute. Add milk. Whisk until smooth.
Remmove
form heat. Whisk in egg yolks. Cook for 1 minute. Stir in lemon juice. Season
to taste.
Serve with asparagus, broccoli or spinach.
