Ingredients:

     1/3           cup  dry mustard
  2          teaspoons  water
     1/3           cup  white wine
  1           teaspoon  white wine vinegar
     1/4           cup  shallot
  1           teaspoon  black pepper
  1                     bay leaf
     1/4      teaspoon  thyme
  2               cups  heavy cream
 

Preparation:

combine mustard and water-mix well and set aside combine wine, vinegar, shallots, pepper, bay, and thyme in a saucepan, over a high flame heat and stir until most of liquid has evaporated stir in cream, heat and stir for 10 minutes stir in mustard strain through a chinois serve hot
