2 russet potatoes -- peeled, cut into
12 ounces linguine
1 thin green beans -- (8 ounces) trimmed,
cut into 2-inch lengths
1/2 cup pesto sauce
parmesan cheese -- shredded |
Preparation:
Bring large pot of salted water to boil. Add potatoes. Cook 5 minutes. Add pasta to pot with potatoes. Cook until pasta is almost tender, about 8 minutes. Add green beans to pot. Continue cooking until pasta is tender but still firm to bite, potatoes are tender and green beans are just crisp-tender, about 3 minutes. Drain. Transfer pasta, potatoes and green beans to large bowl. Add pesto and toss to coat. Serve with grated Parmesan cheese.
