TOMATO SAUCE

Ingredients:

  2        tablespoons  olive oil
  1                     onion -- chopped
  5             cloves  garlic -- chopped  OR
  1         tablespoon  chopped garlic -- commercially
                        prepared
  2               cans  crushed tomatoes  OR
                        whole peeled tomatoes chopped in
                        blender/processor)
  1                can  tomato puree
  1                cup  red wine
     1/4           cup  chopped parsley  OR
  3        tablespoons  dry parsley
     1/4           cup  chopped basil  OR
  1         tablespoon  dry basil
 

Preparation:

In large saucepan, saute onion and garlic in the olive oil until just beginning to brown. Add tomatoes, puree, and wine, and bring to a boil. Reduce heat to low and simmer, partially covered, for 1 hour, stirring occasionally. After 1 hour, add herbs, salt and pepper, and continue cooking, uncovered another 30 minutes. This sauce can be made ahead of time and frozen or refrigerated for up to 2 weeks.
