Preparation:
In medium mixing bowl, stir together flour, brown sugar, baking powder,
baking soda, and cardamom
(or cloves); set aside. Stir together apricot nectar (or OJ), applesauce,
oil and egg whites until
combined. Add to dry ingredients, stirring until just combined, and stir in
snipped apricots. Spread
batter into an ungreased nonstick 11x7x2 baking pan. Bake in 350 F oven
about 25 minutes or until a
toothpick comes out clean. Cool in pan on wire rack. Drizzle with Apricot
Icing. Cut into bars and
serve. Apricot Icing: In small mixing bowl, stir together 1/2 c. powdered
sugar and 2 to 3 tsp. apricot
nectar or orange juice. |
