Lemon Crumb Bars 2

Ingredients:

  1            package  lemon or yellow cake mix -- (18 1/4-oz.)
     1/2           cup  butter or margarine -- (1 stick) softened
  1                     egg plus 3 egg yolks
  2               cups  finely crushed saltine crackers -- (1/4 lb)
  1                can  eagle brand sweetened condensed milk -- (not, (14-oz)
                        evaporated milk)
     1/2           cup  realemon lemon juice from concentrate
 

Preparation:

1. Preheat oven to 350F. In large bowl, beat cake mix, margarine, and 1 egg with mixer until crumbly. Stir in saltine crumbs. Reserving 2 cups crumb mixture, press remaining crumbs on bottom of greased 13x9-inch baking pan. 2. Bake 20 minutes. 3. With mixer or wire whisk, beat 3 egg yolks, sweetened condensed milk and lemon juice. Spread over prepared crust. Top with reserved crumb mixture. 4. Bake 25 minutes or until set. Cool. Cut into bars. Store covered in refrigerator. (Makes 24 to 36 bars) Prep Time: 30 minutes
